SWEET POTATO PIE 🥧
This is a MUST at Thanksgiving (wouldn't you say?)! My mom would make 16-20 pies each year as her’s was indeed THE BEST in the neighborhood. I know that’s a tough claim, but when all the pies disappeared by the aunts, nephews, nieces, friends, and cousins, I felt confident of claiming my mom's first-place prize in sweet potato pie deliciousness.
A few years ago, I watched my mom make this pie for the first time, and to my surprise, it was packed with sugar, like PACKED, and BUTTER, AND it had lard in it, too. No shade because for 30+ years, it put the thanks in thanksgiving for my family. We shared the joy of eating, laughing, and thanks to one another. We even slapped some vanilla ice cream on the sweet potato pie.
But, now that health priorities have changed, I was on a mission to veganize this. I also searched to reduce the sugar. I really wanted the vegan pie to live up to mom's tasty sweet potato pie recipe. I tried dozens of plant-based vegan recipes and thanks to @healthiersteps; I was inspired to re-create this tasty pie!
This plant-based, vegan sweet potato pie still has all the delicious spices that you would expect, like cinnamon and nutmeg, with some other spicy twists :). Except, the potatoes are roasted, which helps caramelize the sweet potato and add more sweetness!

P.S., If you want to make your own gluten-free crust, simply combine 1 cup + 2 tbsp of gluten-free flour, 1/4 cup of coconut oil melted, 1/2 tsp of salt, 1 tbsp of coconut sugar, and 3-4 tbsp of cold water. Mix well and form into a ball. Press and mold into the pie pan. Be patient.
