Swiss Chard + Lentil Stew!





We just finished Week 2 of theEATschool (our very 1st cohort, yay), and of course, we cooked a delicious and HIGHLY nutritious meal together.


Swiss chard is a nutrient-rich, double-layered leaf that's high in vitamin K and low in calories. The nutrient density makes it an excellent source of vitamin K to meet your liver's needs while also providing enough anti-inflammatory nutrients to keep your blood vessels healthy. In addition, the low calories make it a convenient choice for weight loss efforts because it's easy to burn through (takes minimal effort).


We highlighted Swiss Chard, and the lovely benefits of this leafy green! It gives you 3x your daily recommended value of Vitamin K + 50% of Vitamin A + 40% of Vitamin C, all in 1 serving (1 cup cooked)! Is this a nutrient-dense food or what? Plus, it is packed with tons of antioxidants and fiber.
