Lentil & Sweet Potato Stew

This delicious and nutritious recipe cooks in just 6 minutes in the Instant Pot or 20 minutes on the stovetop.


If you don’t have an Instant Pot already, I highly suggest investing in one. It cooks delicious food in a fraction of the time and is super easy to use and maintain.

Lentil & Sweet Potato Stew


Ingredients


  • 1 cup of brown or green lentils, soaked in water overnight or 2- 15 oz. cans of organic brown or green lentils 

  • 1 onion, chopped 

  • 3-4 garlic cloves, minced 

  • 1-2 purple or orange sweet potato (purple includes more antioxidants)

  • 2 carrots, chopped 

  • 1 celery stalk, chopped

  • 1 bunch of kale or collard greens (~2 cups washed), chopped 

Spice Mix:

  • 1.5 tsp of smoked paprika 

  • 1 tsp garlic powder 

  • 1 tsp of onion powder 

  • 1/2 tsp of black pepper 

  • 1/2 tsp turmeric 

  • 1 tsp of cayenne pepper (or habanero),

  •  optional 1 tsp of salt (to taste) 

  • 2 tsp of fresh or dried herbs (thyme, rosemary, oregano, sage, etc.) 

Additional items:

  • 1 tbsp. of dijon mustard 

  • 1 tbsp. of apple cider vinegar (ACV) or lemon

  •  2-3 tbsp of preferred cooking oil (avocado, coconut, etc.) 

  • 1.5 tsp of coconut sugar 

  • 2-3 bay leaves 

  • 48 oz. of veggie stock 

  • Optional: garnish with fresh cilantro or parsley


Tools: Instant Pot or large pot (e.g., dutch oven), cutting board and knives mixing bowls


This recipe serves 4-6 servings.

Directions


  1. Drain and rinse lentils and set to the side.

  2. Prepare and chop the onion, garlic, sweet potatoes, carrot, celery, and kale. 

  3. Create a spice mix with smoked paprika, garlic powder, onion powder, turmeric, black pepper, cayenne or habanero, and salt (to taste). Create herb mix. 

  4. Place Instant Pot on Sauté function or set a pot on medium heat and once hot, add 2-3 tbsp of cooking oil. 

  5. Then, sauté the onion, then add garlic, celery, and carrots until caramelized (~ 5 mins.).

  6. Add the sweet potato and sauté for a few more minutes. Add 1 tbsp. of ACV or lemon to lift potatoes from sticking. 

  7. Then, add spice and herb mix, then dijon mustard to create a paste-like texture, and stir for 3 mins. Add a touch of water if needed to lift veggies from sticking to the pot. 

  8. Then, add lentils and vegetable stock to cover 0.5 inches above the mixture. 

  9. Stir well, then turn on the Instant Pot pressure cooker for 6 minutes, sealed, or turn the stovetop pot on low heat, and then cover with a lid and cook for 10-15 minutes, stirring occasionally until potatoes and beans have softened. 

  10. In Instant Pot, allow it to come to a natural release for 10 minutes. Once cooked (both methods), add the kale and coconut sugar. Stir in well. 

  11. Serve with fresh cilantro or parsley. Enjoy!
